Le Lion Part 3 – The Ranglum
Get the Flash Player to see this player.
Continuing our visit to Le Lion – Bar de Paris in Hamburg join Torben Bornhöft for a Ranglum, a drink by former Le Lion bartender Gonçalo De Sousa Monteiro. A delicious cocktail that combines both dark and overproof rums, the Ranglum also makes great use of the falernum Torben produces with Philipp Jäckel under the Forgotten Flavours banner.
Stay tuned for future episodes coming soon, where we take a look at Le Bon Lion, Le Lion’s tiny private sister-bar, learn about the beginnings of the Traveling Mixologists, and enjoy yet more great cocktails made by the Le Lion team.

What was Torben smiling at when he came up with the ice in the Old Fashioned glass?

It was either nerves, or his fellow bartenders doing something from behind the camera to make him laugh. Or possibly a combination of the two!

Hello Jay!
Is there any substitute for Gosling’s Black Seal in the Ranglum? I own Appleton Estate Extra 12 years. Looking forward to ordering my own Falernum from Torben
Will there be another episode with a bartender of Le Lion?

Ava – Gosling’s Black Seal is a dark rum, so you’d want to substitute with at least another dark rum. Captain Morgan’s is the most common, but it’s not very well regarded. Cruzan Blackstrap is the other really decent alternative, either that or Gosling’s Black Seal are worth picking up. As for other episodes, the last episode at Le Lion has just gone online, and keep an eye out for another episode at the sister-bar, Le Bon Lion, coming later this week.

Ava,
I would also recommend Myer’s Dark Rum. It tends to have a bit more of a vanilla character, but works fine in a mixed drink.
Avoid Captain Morgan’s Tattoo Black. Not worth the time of day.

Hmm, I would actually argue that for most applications Appleton Extra would be a fine substitute for Gosling’s Black. It’s a bit lighter in color than the Gosling’s but flavor-wise it’s not too far off, just not quite as sweet.
By contrast, I would not use Cruzan Blackstrap as a substitute for Gosling’s. The Cruzan has a significantly stronger molasses type flavor and very noticeable vanilla overtones that are not present in the Gosling’s at all.
Myers’s would make an ok choice as well, and in this drink I think you might even welcome the extra tang of that rum. But I would say if you have the Appleton 12 just use that (unless you think it’s too expensive to mix).
It’s a good drink, by the way; sort of a spicier Dark & Stormy. I didn’t use the dash of syrup, and wouldn’t, having tried it. I suppose it depends on the sweetness of your falernum.
